While out and about yesterday, Dave found a cookbook with some really good recipes in it, including this one for Butterscotch Cookies.
2 C. brown sugar
1 C. shortening or margarine
2 eggs
1 tsp. baking soda
1 tsp. cream of tartar
1 tsp. vanilla
3 C. flour
Cream brown sugar and shortening together. Add eggs, then dry ingredients and vanilla. Mix well. Chill a short time and roll into balls. Flatten a little and bake at 375 F for 15 minutes. Remove from cookie sheet and cool on rack.
Yields 4 1/2 dozen.
These are REALLY good! 
ETA: You might want to shorten the baking time a little bit for softer cookies.
