We-e-e-e-ll… it WAS going to be courgette fritters (linky) with garlic roast tomatoes as a side. Then Matt told me that he’d thrown out the courgettes, so I adapted that to the tomato dish plus roast veg and sausage chunks. Then, halfway through prep for that, I discovered he hadn’t thrown out the courgettes. So now it’s the fritters and the sausage and vegetable dish.
And I have entirely too much cleaning to do, as usual, but also today we’re going to be stocking the trailer for Dave’s camping trip. He’s pretty excited about it, since he hasn’t gotten to go all summer.
And I wish you could come camping, too. It’ll even be your kind of weather. Temps here are supposed to be in the low to mid 80’s, so figure about 10 degrees cooler in the mountains, plus I’m sure there’ll be rain involved, at least in the afternoons. And the best part is that since it’ll be after Labor Day, there aren’t likely to be many other people around at all. I wish I could go for the whole week, but it just wouldn’t be responsible of me to take myself or Heather out of school for that long. *sigh*
